Nova Biologicals Improves Safety for International Coffee Company

Following the FDA’s BAM guidelines, Nova Biologicals developed and performed test methods to improve product safety of instant coffee for international coffee company.

Background

International coffee company and longtime Nova Biologicals food-testing client requested U.S. Food and Drug Administration (FDA)-recognized microbiological testing of several types of instant coffee.

Challenge

Following the FDA’s Bacteriological Analytical Manual (BAM) guidelines Nova Biologicals was tasked to develop and perform test methods to determine the presence of total aerobic bacteria, yeast and mold, lactic acid bacteria, Salmonella species and Escherichia coli in instant coffee samples.

Solution

Validated BAM methods for testing instant coffee allows for the confident detection of the specified microorganisms in instant coffee.

Results

Reduced the potential for contaminated instant coffee products. Improved regulatory reporting regarding product quality. Simpler process for rapid microbiological evaluation of samples. Simpler process for raw material assessment. Support for new marketing services. Identified potential weak links in the raw material supply chain.

Learnings

Effective and timely communication between quality assurance officers, management, manufacturing and Nova Biologicals-improved product safety. We also established test methods, when properly modified and validated, that are reliable and defensible components of protecting food safety and food safety testing./p>

Next Steps

Utilize FDA BAM test methods to routinely test instant coffee products, in addition to evaluating and validating FDA BAM.
